Chili Oil, a popular condiment incorporated in various cuisines worldwide, is widely recognized for its spiciness and distinct flavor. Some research suggests it could have an impact on histamine levels, primarily attributed to the key ingredients: chili peppers and oil.
Chili peppers, the principal component of chili oil, contain a substance called capsaicin. Some research states that capsaicin triggers the release of histamine, which may increase histamine levels and cause allergic reactions, particularly in individuals with histamine intolerance. Moreover, capsaicin can stimulate the sensory nerves and induce a variety of neuropeptides, excluding histamine, responsible for neurogenic inflammation (Calixto, Kassuya, Andre, & Ferreira, 2005, PMID: 15571598).
In contrast, another research implies that capsaicin might have antihistamine effects. A study demonstrated capsaicin's ability to inhibit histamine release from mast cells, which are white blood cells storing histamine. The inhibition was dose-dependent and could potentially decrease histamine levels (Kim, Lee, Song, & Park, 2003, PMID: 12890319).
The oil used to infuse the chili peppers may also play a role in histamine levels. For example, if olive oil is used, it contains a compound named oleuropein, demonstrated to inhibit histamine release and synthesis in laboratory settings (Kawasaki, Gomi, Ishioka, & Hu, 2010, PMID: 20109195).
However, these studies are primarily focused on individual ingredients rather than chili oil itself, and conflicting evidence from these studies makes it challenging to draw a definitive conclusion about the impact of chili oil on histamine levels.
