The impact of coffee beans, specifically, on histamine levels is primarily predicated on the caffeine content. Caffeine has been found to be a histamine liberator, which means that it can stimulate the release of histamine in the body. While coffee beans themselves do not contain histamine, their caffeine stimulatory effect could potentially provoke an increase in histamine levels. Moreover, some studies suggest that an overconsumption of caffeine can lead to inflammation and cause the immune system to react thus resulting in a release more histamine. And as the body's histamine levels rise, symptoms of histamine intolerance may appear in susceptible individuals. The relationship between caffeine and its effects on histamine levels continues to be explored in the scientific community (1). In contrast, there is a new area of interest examining the potential benefits of green coffee beans. Green coffee beans are coffee beans that have not been roasted and, therefore, contain a higher amount of the chemical chlorogenic acid. This acid is thought to have health benefits, including being a powerful antioxidant and anti-inflammatory agent. Chlorogenic acid may exert anti-histamine effects by reducing inflammation and oxidative stress – factors that can induce histamine release (2). Thus, overall, regular roasted coffee beans might induce the liberation of histamine due to their caffeine content while green coffee beans could potentially have a decreasing effect on histamine levels due to their high chlorogenic acid content. As research progresses in this area, these suggestions will become more precise and accurate.
