Kudu meat, as a type of game meat, doesn't explicitly feature in research on histamine content or histamine-triggering foods, a thorough evaluation of its potential impact can be made in relation to histamine levels by looking at general information on meats and their processing. Freshly prepared Kudu meat, similarly to other red meats when freshly prepared, is not typically high in histamine. This is because histamine content in meat products usually increases with time due to microbial activity, specifically in aging, curing or fermentation processes. Therefore, if the Kudu meat is fresh, it is not likely to contribute to high histamine levels or histamine intolerance symptoms for those with sensitivity (Maintz, L., & Novak, N., 2007).
