Cucumbers are generally low in histamine and are not known as histamine liberators, which promote histamine release. They contain a notable quantity of the enzyme 'diamine oxidase' (DAO), which assists in breaking down ingested histamine, potentially lowering the histamine load within the body. However, they may have potential adverse interactions in people with specific sensitivities. Cucumber seeds, for instance, are known to have a higher concentration of cucurbitacins, compounds which have been reported to cause indigestion in some cases. Although, the link between cucurbitacins and histamine levels hasn't been well researched. In terms of lowering histamine, cucumbers uniquely contain a bioflavonoid, quercetin. Quercetin shows promise in its potential antihistamine effect, as current research has suggested it can both inhibit the release of histamines and reduce inflammatory response. Please note that individual responses to various foods can differ, and what might not increase histamine levels in one person might trigger an increase in another. Therefore, any dietary changes or additions should be personalised and context-dependent.
